On evenings when Jessica's not running the beverage program at The Dabney, watching trash TV on Bravo is our preferred means of unwinding. 'Below Deck' on Monday nights is probably the highlight of the week, and at least the deck & interior crew is relatable (unlike The Real Housewives). After a few episodes, you’ll notice that the yacht guests just can’t get enough Espresso Martinis, and after a while you’ll crave one yourself. Fortunately, Jess improved the original recipe, swapping aged rum (preferably from Trinidad) for the vodka, and good red vermouth out for the coffee liquor. Much tastier with rum, lighter and more complex from the vermouth.
Port of Spain Martini
1 ½ oz The Scarlet Ibis, Aged Trinidadian rum
¾ oz La Quintinye Royal Rouge vermouth
¼ oz simple syrup (also try it without)
1 oz ristretto shot of espresso (Nespresso, Bialetti Moka Pot, cold brew concentrate, whatever works)
Instructions: Pour all the ingredients into a cocktail shaker (espresso last), then fill with ice. Give it a short and vigorous shake, then pour through a strainer into your (chilled) glass. Express a lemon peel and float on top of the foam.
