100% whole bunch
10 weeks maceration. No punching of the cap but a few pumping over while the fermentation. Once the fermentation phase is done, no more intervention till the devating.
Aged 13 months in stainless still vat
1,5 gr/hl sulfites 15 days before bottling
Bottled end of October 2019
23 gr/l of SO2 after bottling
No filtration, no chaptalisation and no yeast added
Specific nose of a pineau d’Aunis, delicate of red fruits and spiciness
A fresh mouth with a good length and depth. Very fine tannins.
Can be drunk on its own but great with light meat or light spicy asian food
