Beautiful, brilliant Blanc de Noirs–
Australe is from south-facing vineyards of Pinot Noir in the commune of Buxières-sur-Acre. This fresh and energetic Blanc de Noirs is composed of vines that thrive on Kimmeridgian soils, with Southern exposure. The wine was fermented and aged in French oak barrels before being aged sur latte for 15 additional months, with zero dosage added.
- Benoit Doussot is a Mersault-trained winemaker who worked at Vouette for several years, and eventually opened up shop and created a micro-negociant estate called Clandestin.
- Clandestin means “hidden” or secret, because the estate focuses on small, out of the way parcels that the more traditional winemakers eschew.
- Kimmeridgian clay has a fossilized comma-shaped oyster shell called exogyra virgula
