Curated & lovingly-crafted Virginia cider.
The Pilot Mountain sparkling cider is a field blend of young heirloom apples that were organically farmed with zero copper by grower Craig Winslow. The apples soaked for one to three days on their skins before being pressed into glass demi johns, and undergoing a slow and steady fermentation. The bottles were aged on lees for 10 months prior to being riddled and disgorged by hand, with zero added sulfur. Complicated and serious, with major dried apple and sassafras vibes.
- Patois Cider was created by Patrick Collins and Danielle LeCompte; they are all about balance and creating ciders that beautifully capture fleeting moments from small pockets of Virginia.
- 2021 was a good Virginia fruit year, with minimal frost scares and a warm growing season.
