Spruced up Saison.
New Jersey wheat, buckwheat and rye, spontaneously open top fermented on a 2019 harvest of local New Jersey spruce tips. After a year of neutral oak aging the beer was conditioned on 2020 harvest tips from the same spruce trees. Gin fanatics will love this funky, botanical beer!
- The Referend was founded by James and Melissa Priest in New Jersey, and specializes in producing spontaneously fermented wild ales.
- They recently moved from New Jersey to a former dairy farm located in Pennsylvania, and are still crafting wild ales meant to showcase the terroir of the area.
- For the 2020 harvest a little wildflower honey was added to the brew.
