An experimental release from a small Californian producer & two man operation, En Cavale. Wolfgang Weber & Chad Hinds’ idea was to team up and make soulful yet accessible expressions of old-school Californian wine with a hat tip to many of their favorite wines from France and Italy.
'Who Goes There?' is Sauvignon Blanc, Chenin Blanc, and Verdelho sourced from the Suisun Valley, just southeast of Napa (and nestled between the Vaca and Howell Mountain ranges).
The Sauvignon Blanc comes in a couple of weeks before the other varieties, so it's fermented on its own, spending up to three weeks on the skins before being pressed into a mix of used acacia and oak barrels. The Chenin and Verdelho are fermented together, also on their skins for a similar period, and are then pressed to neutral oak barrels. The marriage of these varieties complements one another nicely: one adds acid, one adds fruit, and one adds a mineral quality, all while showcasing the variety and flexibility of what California has to offer.
