Eric Texier’s Chat Fou is composed of Grenache, Cinsault, and a bit of a white blend of Clairette/Viognier/Chassels and other white grapes. The vines were planted from a south-facing slope, yielding a flesher and more charming wine. The fruit is farmed organically, and was fermented with native yeasts in concrete tanks followed by a short five-day maceration with no sulfur. A lighter “vin bistro,” styled wine.
