The Banhez Mezcal Ensemble is composed of 90% Espadín and 10% Barril agave, resulting in a mild, floral and fruity Mezcal perfect for folks newer to the Mezcal game. Banhez is a cooperative committed to making mezcal sustainably using artisanal techniques with earthen wood-fired ovens lined with local river stones. All mezcal is fermented in open top wooden vats, where the ambient yeasts convert the sugars into alcohol.
- Banhez Mezcal was started by Francisco Javier Perez Cruz and his son, Luis, who saw the hardship that many families faced while making mezcal.
- Both saw the Mezcal industry separated families, and it became their mission to keep hardworking families together and devise a way for them to work towards a common goal.
- In 2004 Francisco was elected president of the National Mezcal Council and received federal funding to establish nurseries and reopen distilleries around Ejutla.
