Gérard Duplessis produces some of the most iconic, groundbreaking natural expressions of Chablis. He is one of the few producers in the region to refrain from using sulfur as much as possible, and tends to his plots like they are his own children. The Mont de Milieu site has limestone rich soils with clay, and is considered on par with some of the Grand Cru vineyards of Chablis. The 2018 vintage was about as perfect as they come, and if there ever was a year worth cellaring - this would be it.

- The Chardonnay vines thrive in Kimmeridgian Clay and Limestone soils.
- Lilian had the opportunity to study winemaking in New Zealand and other parts of the globe, but the guy knows what he likes – and it’s Chablis.
- Lilian barely uses any sulfur in his wines, and in the 2018 vintage no sulfur was used.
