This wine has a really cool undercurrent of smoke and an ash-like minerality that, when combined with the tart cherry fruit here, sort of gives the impression of eating fresh cherries during a volcanic eruption.
A blend of organically grown grapes hand harvested in Mallorca - 65% Callet (old vines) 25% Manto Negro and 15% Escursac (with carbonic maceration). Fermentations 15-30 days with skins, using 10-25% whole bunch with the Callet. 6 months aging in 500L old French barrels followed by 6 months in the bottle before release. Bottled unfined, unfiltered and total SO2 8mg. Annual bottle production 2,500.
