The Gamay and Pinot Noir was harvested at the Domaine de Gambalu (Fancueil, Loire et Cher) and is three years in organic conversion.
The Pineau d’Aunis comes from Ariane's vineyards.
Blended after ten days fermenting. 12 months aging in stainless steel.
1.5gr/hl sulfites added one month before bottling
Bottled by gravity. No filtration, No chaptalization, no yeast added
