‘Stout Rullquin’ is a blend of 7/8 Rulles Brune and 1/8 Tilquin Lambic that is refermented in barrel at Tilquin for 8 months, then bottle conditioned for 6 months. This unique blend of a Belgian Stout and spontaneously fermented Lambic is the first of its kind and has been produced since 2014.

Brasserie Artisanale de Rulles was opened by Grégory Verhelst in 2000 in Southern Belgium.  They specialize in traditional Belgian Ales and only use water, malt, wheat, hops, and sugar.  Grégory’s ‘Rulles Brune’ is his take on a stout.  He likens it more to a cappuccino stout than a bitter black coffee stout.

Even though ‘Stout Rullquin’ is only 1/8 lambic at the time of the blending, the beer goes through an 8-month aging in oak that exposes the whole blend to wild microbes.  This time in barrel helps to create a balanced brew out of these two disparate parts.
