Aureliano comes from a long history of making mezcal. He is located in the town of San Baltazar Guelevila (Central Valley region) and known for his farming skills for rare agave.
The Coyote is a 600 liter batch, double distilled in 2014 (so it has some age on it). Coyote is used regionally to describe different agave species. This has mineral and very crisp aromatics up front, with a bright Meyer lemon and dried grass undertones. If you like Riesling grown on grey slate you will like this. Electric.
