Manually harvested on the 18th of September, and placed in small cases of 15 kg. 30 days of maceration in Acacia barrels. After the first maceration, like the ripasso method, it is left for six months on the skins of Mantonico Bianco, a very old white variety from Calabria. Aged for 1 year in old oak barriques. This wine is obtained from spontaneous fermentation, unfiltered and without the addition of sulfites during the bottling phase.
