Picked on the morning of October 25th, 2019, the 2019 Ashes to Ashes was the first vintage I felt confident in from out of the gate, from the farming to the fermentation having had a few years in the block under my belt and finally felt like I began to understand how I wanted to express that site. With that, there was a departure from the carbonic experiment in 2018 and settled more into a semi carbonic 30% whole cluster situation. When the fruit was processed and sealed up, it remained untouched in the fermenter for ten days before beginning cap management. At the onset of fermentation I was more aggressive with punch downs through peak fermentation temperatures but backed off the second week and only conducted pigeage leading up to pressing at 20 days on the skins. Élévage was in older barrels for 10 months and bottled with 20 ppm added after malolactic completed in March and another 20 ppm at bottling in August. Unfined and unfiltered.
