For perhaps the first time since prohibition Wilderness Trail Distillery have resurrected sweet mash fermentation, where every batch gets fermented fresh, without any of the leftover ferment (or sour mash) from previous batches. Virtually no other distillery has pulled this off with consistency, and the results other an unparalleled level of depth and finesse in their whiskeys.
- Mash bill: 64% corn, 24% wheat and 12% malted barley using proprietary yeast strains.
- Small batch blend of up to 18 barrels from 1 fermenter.
- Aged in #4 char barrels at 110 proof after coming off the still around 137 proof
- Bottled in Bond, aged between 5-6 years in barrel, bottled at 50% abv.
