Vinification: Whole cluster fermented in fiberglass vats for 8 days. On the morning of the 9th day the grapes are pressed, and the press juice is combined with the free run juice in stainless-steel tanks to finish fermentation. Only the naturally occurring indigenous yeasts are used in the fermentation. Racked and transferred to Amphore after the completion of malolactic fermentation.
Maturation: Aged 8 months in Amphore. Prior to bottling a low dose of sulfur is added to the wine. The wines are bottled unfined and unfiltered.
