Better than Champagne
This blend is Macabeu and Xarel-lo from two adjoining parcels in Penedes (aka the home of Cava). The grapes are spontaneously fermented in stainless steel and French oak, and then bottled before the fermentation is complete. Lightly toasty with crispy orchard fruit and enthusiastic bubbles, this is a perfect stand-in for Champagne.
THE DETAILS:
- Anima Mundi is the project of winemaker Agustí Torello Roca, who also serves as the winemaker for his family’s nearby winery, AT Roca.
- What’s in a name? Anima Mundi is a concept, championed by Pluto, that all living things in the universe are connected. A “world soul,” if you will. Groovy.
- Amina Mundi and AT Roca are loated in the eastern part of Penedès near the Massís del Garraf mountains and the foothills of the d’Ordal mountains.
