A blend from five vineyard sites, with mostly Western exposition. 60% clay soils, 40% Bajocian limestone soils. Planted in 1962, 1974, and 1978. Farmed Biodynamic (Ecocert and Demeter certified.)
Manual harvest, pneumatic pressing, spontaneous fermentation, fermentation and aging in 228 liter barrels (10% new barrels) for 17 months, light filtration before bottling. Total SO2 less than 20 ppm.
Ready to drink, with 10 years of aging potential.
