The Chenin Blanc is sourced from the Union School Vineyard, a warmer climate plot within the Willamette Valley. With plenty of good drainage and a crotchety old German looking after the vines – it’s basically the perfect spot for this high acid grape. The wine was directly pressed and aged in large 500 liter casks, prior to experiencing elevage for 12 to 18 months.
Vibes with:
- Drinking a bottle of this at the end of the rainbow.
- Swapping out your bottle of Vouvray for this.
- Kung Pao Chicken.
