“Nuits-Saint-Georges in Cellettes…”
A brambly and serious wine from Hervé Villemade that is composed of 85% of Pinot Noir and 15% Gamay. Inky black cherries, drizzled over layers of velvety tannins and earthy minerality. Burg-lovers will fall head over heels in love for this multifaceted, cerebral, and complicated wine.
- Hervé Villemade took over his father’s plot of vines in 1995, and developed a very serious allergy to sulfur in 1997. During the year 2000 he decided to convert his property over to organic viticulture.
- The organically farmed vines of Pinot Noir and Gamay are between 25-50 years old.
- This is a single vineyard bottling from an estate planted with exclusively selection massale vines, and a lot of the plantings are owned by Hervé’s father.
- The wine was raised in a mixture of foudre, barrel and amphora.
Pairs with:
- Old leather bound books.
- Roast cornish game hens.
- Your own personal take on Leonardo Da Vinci’s drawings.
