Le Clos Guillot, arguably produces Baudry's most desired cuvee; the hillside, south-west facing vineyard, with clay soils over yellow tuffeau—a local type of limestone that is porous and almost chalky in texture— has ideal water retention and draining qualities, and sun exposure.
Fruit expression runs deeper and more brambly, and can take on the more hedonistic, feral characteristics of Northern-Rhone syrah, with the finesse of Burgundy. These wines are ageworthy for sure, yet accesible for more immediate consumption with some aeration and a sunday roast.
Vinification / Aging: Manual harvest. Two-week fermentation in cement or oak vats, then twelve-month aging in oak barrels, 2-5 years old, followed by 9 months in unlined cement vats. Bottling in September, two years after harvest.
