100% Ploussard planted in 1991 on limestone. This soil lends this tricky, light-bodied grape a sharp and mineral-driven quality. The vines were destemmed before a 20 day maceration period for the lightest touch of color, then gently pressed prior to being aged in 600 liter neutral oak barrels. 'Tout Ou Tard' is the ultimate heady combination of fruit and florals, perfect for high-end Burg and Bojo lovers who want to try something different.

Jean Baptiste Menigoz began his career as a teacher in Arbois working with special needs children while making natural wine with Raphael Monnier in his spare time.
Eventually, he took an apprenticeship with the legendary Jura producer Stéphane Tissot, and made the transition to winemaking full time.
Bottes Rouges is made up of the dynamic duo, Jean-Baptiste Menigoz and Florien Kleine Snuverink, a former restaurant manager turned vigneron.
