Wisconsin-based Funk Factory Geuzeria’s Fleurs d’Abondance is a classic blend of saisons that were fermented and aged to maturity in neutral oak foeders. At the end, loads of local, apple blossom honey was added to the brew and before bottling to create a rustic saison. The name, “Flowers of Abundance,” was chosen as an homage to the significant amount of honey used in the brew.

- It was started by Levi Funk, who fell in love with lambics and started making them in his basement.
- The process at Funk Factory involves using a turbid mash, similar to the process Belgium-based Gueuzerie, Cantilon, has implemented since the 1900s.
