The Champagne Premier Cru Grand Cuvée NV from Thomas Perseval is an even split of Pinot Noir, Pinot Meunier and Chardonnay with a long elevage, disgorged in December 2020. The vines were sourced from three plots with Northern exposure and thrived on a mixture of clay and limestone - which lend a sharp minerality to this bottle of bubbles. Thomas is part of a region-wide movement to commit to making terroir-driven, honest Champagnes.
