An extended skin contact Pét Nat made with Chardonnay from Sonoma Mountain that calls for a good time. For this bubbly, the Chardy rested on its skins for three days during a slow fermentation process before bottling a la méthode ancestrale. The Florèz Wines Pét Nat 2021 has just a touch of tannin, with plenty of apple juice and tangerine aromas.

Florèz Wines was founded by James Jelks in 2017, and are all about prioritizing old world technique and sensibility in their wines.
After completing his degree in Oenology at UC Davis, James studied winemaking all over the world for 10 years before starting his own project in Santa Cruz.
This Chardonnay is sourced from the Nelson Vineyard, lovingly cared for by James’ friend and peer, David Rothschild who is a rising star within the California Natural wine world.
