Totally ‘80s, dude!
The folks at En Cavale love Zinfandel, because to them nothing epitomizes California’s spirit quite like this grape. The Zinfandel for this wine is sourced from the Suisun Valley, an area very much reminiscent of old time California, with rolling pastures and oak trees (and highways). This wine is a nod to the Clairet-style of Zinfandel that was popular in the 1970s and ‘80s.

- The vines were harvested early and spontaneously whole-cluster carbonic fermented for one week prior to being foot-tread to break up the juice.
