This Slovenian Pét Nat is made in the ancestrale method with secondary fermentation occurring spontaneously in the bottle. Composed Sipon - or Furmint - a grape indigenous to the region. Plenty of sharp citrus fruit aromas, with a pleasantly wild and feral quality.
- Matja Žerjav is a third generation winemaker who took over managing the winery at the tender age of 24.
- Matic Wines is within the predominantly white wine region of Štarjerska, close to the borders of Austria and Hungary.
- The wines are kept in an old cellar from 1852 that is completely underground, so the temperature can be maintained throughout the year from 50 to 54 degrees Fahrenheit.
- The Sipon comes from a vineyard of 50-year-old vines, and is one of Matic’s gems.
