Back again for spring/summer of 2019, Pichon's Sauvage Gris is an organic Rosé from Ventoux in the Rhône. Sauvage is the pink version of the Pichon's delicious red and comes from the same 52 acres of vineyards in Mormoiron. The copper-colored blend of 60% Grenache, 20% Cinsault, 10% Carignan, and 10% Syrah is pressed immediately with no maceration (making it a vin gris and not a traditional Rosé), fermented and vinified in cement & steel followed by aging primarily in steel. No chemicals, pesticides, or herbicides are used on this property. This is a Rosé for drinkers who enjoy bone dry wine with plenty of depth.
