Sylvain Dittiere, nicknamed “TonTon”, grew up in Saumur where his parents farm roses. After his studies of oenology, he interned with Domaine de l’Ecu, Gerard Gauby in Roussilon, Marc Tempe in Alsace, Thierry Germain and the mythic Clos Rougeard. In 2010, he started his Domaine with Pauline Foucualt, his wife who is part of the Clos Rougeard family. The winery is located in Montreuil-Bellay, one of the most beautiful village of France, 10 miles from the town of Saumur. Today they own 6ha. Sylvain and Pauline have been recognized has some of the most talented vignerons by their peers. The wines are rapidly sold out and you can find their wines in some of the best restaurants and caviste in the country.

They own all their parcels and the entire estate is farmed organically - no chemicals products are used, only copper and sulfur when needed and at very small dose. The parcel of Saumur is situated right outside the village in the lieu-dits calledPouches, one single plot of 2ha. The soil is vigorous and composed of sand, silt, clay with a subsoil of limestone. All the vines are hand-harvested, in small basket. In terms of vinification, the grapes are all destemmed and macerate for a long time: 6 weeks in concrete vats. We could except some massive wines but it’s quite the contrary, Sylvain does nothing, no pumping over, no pipeage. The wine had kept the purity of the Cabernet Franc its fruits and the fine tannins. The pressed juice 1/3 and free run juice 2/3 are separated and only assembled at the end. The cave were the wines ages dates back from the XIII century. This is a beautiful cave and perfectly suited for the aging. The wines matures in a combination of used barrels originating from Saint-Emilion, Anjou, Cotes-de-Nuits and the Northern Rhone and partly new. Long elevage (minimum of two years) no racking, the is bottled unfined and unfiltered and minimum of amount of SO2 25mg/l.

Look no further, this is probably one the best Cormiers Sylvain and Pauline have produced. 70 years old vines from a single plot located in the lieu-dits of Les Cormiers near Le Puy-Notre-Dame. The soil is made of silex and clay/sandy on top of tuffeau from the middle of the Turonian period. Several weeks of maceration in concrete, all destemmed. Aging in new barrique for 24 months with no intervention beside toping the barrels.  Intense, deep, juicy, the mouthfeel is gorgeous, an amazing wine for those who can not wait but again time will only benefit.
