100% Sauvignon Blanc from En Cavale, a collaboration between Wolfgang Weber and Chad Hinds of Iruai. This Sauvignon Blanc is from Contra Costa and was the OG wine of En Cavale. The vines were planted in the early 1990s, sourced from a vineyard deep in the East Bay delta land. This Sauvvy-B that leans towards the tropical, citrusy side – no cat pee here :)

En Cavale is a collaboration between friends Wolfgang Weber and Chad Hinds of Methode Sauvage.
The wines are a nod to their favorite wines from France and Italy.
The wine was foot tread and left for a short soaking period before going to press, and aged in a mixture of neutral French oak, acacia barrels, and tank.
