Audrey Pilorget was making wine in Alsace for 20 years as the winemaking partner of Christain Binner. After they split up, Audrey left Alsace and went to run a well known natural wine shop in Paris called La Quincave for the next 9 years. After years of planning and saving she was able to make the move down to the Loire and begin to make wine again in the small town of Bourré. She is also an oenologist and professor at the local wine school.
Audrey's first vintage was in 2019 and right now she works with purchased fruit from local organic and biodynamic growers, eventually looking to obtain vineyards of her own in the near future. Long maturation is the rule on her wines with whites aging up to 2 years before release and around a year for the reds. She also vinifies without intervention....Specifically no filtering, racking or sulfur.
100% Sauvignon Blanc, from outside the village similar limestone soils. Ages for 2 years in Barrique and then a year in bottle before release.
