The Stella Maris Sauvignon Blanc is composed of fruit from 40-year-old vines purchased from Mikaël Bouges’s small, 8-hectare estate in the Faverolles-sur-Cher in the Touraine. The wine was directly pressed, fermented, and aged in fiberglass vats on the lees. A slender, elegant Sauvignon Blanc with star-bright fruit, and plenty of refreshing acidity!
- Noëlla Morantin was originally from Brittany and started making wine in the Touraine in 2008; wine is one of her obsessions and after several years she was hired as the owner of Les Bois Lucas.
- In 2016 Noëlla purchased four hectares to produce her single parcel Sauvignons and she owns 6 hectares total.
- All of her vines are farmed organically and vinified without intervention or manipulation in large wooden vats.
- Her wines are declassified because she doesn’t want to deal with AOC politics.
