Taste a forgotten terroir…
Raphaëlle Guyot’s Sauvignon Maceration is from the long lost region of the Yonne on the periphery of Burgundy. Technically the Yonne is closer to the Loire than the Cote d’Or, and they even have an appellation that allows for vinification of Sauvignon Blanc! This appellation was devastated by the Phylloxera epidemic, but young vignerons like Raphaëlle are all about bringing back what was lost. This macerated orange Sauvignon Blanc was aged in tank, and underwent malolactic fermentation.
- Raphaëlle did not set out to be a vigneronne, but after attending business school she worked internships with an importer in China, while working harvests in both Sancerre and Chablis.
- When she first started tending to her parcel, it was completely overgrown with vegetation and trees.
- Her goal is to increase her holdings to 15-hectares.
- Raphaëlle does the majority of her work as a negociant.
