The 2019 Sparkling Chenin is made in the traditional method, meaning two fermentations have occurred, but does not have an unnecessarily elaborate elevage. Pressed juice is fermented in convertible stainless fermenters that have the option of taking the top off. The wine rests for six months in a combination of stainless steel and neutral oak vats before tirage, which occurred in February of 2020. Riddling and disgorgement took place in the summer of 2020. All of this is to say that these guys aren’t out here trying to make the next Champagne, they’re making California wine that’s unashamedly not trying to be something else. Fruit in this part of the world is particularly known for its mineral drive and electric acidity, with vines planted in the early 90s of Chenin over alluvial clay soils. I can’t count how many times I’ve referenced the vibrancy of these wines, but it’s simply true. Now is not the time to mess around with wines that you’ll feel punished for drinking. That’s why it’s so important to have wines like this, that are fresh, with incredible structural characteristics, but at the same time aren’t so serious that you can’t open them whenever you please.
