This smoked Farmhouse Ale with NY
Oyster Mushrooms is is deeply
layered and flavor-packed.
Brewed with our own malted Violetta barley, NY
State wheat, smoked malt and Fuggle hops
and finished with organic NY white oyster
mushrooms before being fermented with our
farmhouse-sourced saccharomyces strain in
stainless steel. It is then bottle conditioned with
Catskill maple syrup.
This labor of love requires a full 6 months of production
time to coax out all of the funky, dynamic and robust
flavors of the farm-sourced elements.
