'Evidence' is Menu Pineau from 8-10 year old vines, late harvested, and vinified in the oxidative vin de voile style. The grapes spend 10 years in barrel for elevage, and the resulting wine is totally dry. The resulting wine is oxidative, lengthy and cerebral.
- Claude Courtois does not consider himself to be a biodynamic vigneron, but he farms a balanced and chemical-free 13 hectares of vines in the Sologne VDP.
- Claude’s son, Etienne is starting to help his father out with the vinification process, and is continuing his father’s legacy at the estate.
- Vin de voile wines are raised, “under the veil” which means they are slightly oxidized under a layer of yeast called “flor.”
