Wine + Cider = Widr
Sometimes things just work, like the Cyril Zangs Widr 2016. This funky little bevvie is a an even split of cider made from Normandy apples and Syrah from Ardèche, from winemaker Andrèa Calek. Plenty of dark, bold fruit from the Syrah intermingled with cheesy, yeasty funk from the apple cider.
- Cyril Zangs sources fruit from 69 different apple varieties, and harvests them from high-stem orchards that range from fifteen to sixty years old.
- The apples are sorted, then grated to create a marc which is put through a hydraulic press that is frequently racked during the fermentation process.
- The cider undergoes a secondary fermentation process in bottle to get a little bit of sparkle.
- Cyril Zangs started crafting cider after working as a book sales rep in Paris and is known for producing some of the most elegant and vinous vintage ciders around.
- Kitchen experiments.
- Your grandfather’s pipe.
