The Herve Souhaut “La Souteronne” is made of 100% Gamay from the Northern Rhône. Sure, you’ll definitely get all that bright red fruit and minerality that's typical of this happy little grape, but there’s also a darker, smoky quality to this wine. - Hervé’s goal as a vigneron is to craft drinkable wines that are balanced between freshness, fruit, acidity and tannin.
- The Gamay vines are 60 to 80 years old, and are organically farmed prior to being harvested by hand and vinified during a very long, cold maceration period.
- The wine is fermented in wooden tanks and aged in wooden barrels on the lees for an extended period of time.
