Arianna Occhipinti’s Terre Siciliane Bianco is composed of 100% Grillo, a Sicilian white grape that yields savory, herbaceous whites. The fruit was harvested by hand, destemmed and fermented spontaneously in a concrete tank with a two day maceration period for some additional structure. The wine was then aged in 25-hectoliter Slavonian oak barrels and bottled unfined and unfiltered. The vines thrive in a fairly high altitude of 280 meters above sea level in a mixture of red sand, chalk and limestone, and are planted on hillsides surrounded by a pine forest.
