Nestled in the rugged Agly Valley, west of Perpignan, Domaine Vinci’s 6 hectares of vineyards are surrounded by forest and rocky outcrops, the old vines sitting amongst scrubby garrigue on slopes that prohibit use of machinery. The domaine was established in 2001 by Olivier Varichon and Emanuelle Vinci, who fell in love with the rustic charm and remoteness of the site. Each parcel is so isolated that there is no threat of windborne chemicals to disrupt the organic operation. The very old vines give absurdly low yields – as little as 15hl/ha in many cases. All the pruning is done by hand, but the vines otherwise are allowed to grow wild, surrounded by weeds and wild flowers. In fact, the local vignerons, whose own rows are perfectly manicured and barren, call Olivier a ‘wild bush man’.

After harvesting by hand, the grapes are brought to the winery and left overnight in the cool cellar, before being crushed by foot without destemming. Fermentation takes place in old wood and stainless steel for the white, and concrete and stainless steel for the reds, always with natural yeasts. With the exception of Roc, which is entirely unoaked, the reds are matured in large old barrels to add depth and a creamy character from the lees, while avoiding any overt oak flavours. No sulphur is used during vinification, and a minimal amount is added at bottling. All wines are bottled unfined and unfiltered.

The clay, schist, limestone and granite soils of this terroir express themselves through profound minerality, and the old vines find their voice in the incredible purity and concentration. Each cuvée is a testament to the hard work and utter dedication of Olivier and Emanuelle.
