A wine certified organic by ECOCERT and biodynamic by BIODYVIN, from the limestone hillside known as "les Corvées Sous la Tour". Instead of chemical fertilizers, Stéphane uses homemade compost and herbal tisanes. Grapes are harvested by hand, whole bunches, macerated 3 weeks in conical wood vats. Matured in Burgundy barrels for 1 year (15% new oak). A light dose of sulphites after malolactic fermentation, bottled without sulphur, and without filtration.
