VARIETALS: 90% Cabernet Franc, 10% Grolleau
FARMING: Organic
VINEYARD: From multiple parcels. Vines average 40 years in age.
SOIL: Schist bedrock under sandy volcanic topsoil.
VINIFICATION: The grapes are gently pressed. Native yeast fermentation. All vinification occurs in stainless steel tank. Malolactic does not occur.
AGING: Aged for at least 4 months in stainless steel tank before bottling.
