"Eremitas are three wines originating from three distinct plots, all sharing the commonality of being located in the Douro Superior region, with a Mediterranean/continental climate, south-facing exposure, and schist soil from the Desejosa Formation. However, they present slight differences in rockiness and altitude. Despite being vinified in the same way and with the same grape variety, the plots yield different wines! This highlights the different "telluric information" that each place transmits.
Paulo de Tebas has moderately deep soil with a micro quartz fault running through the plot, at 400 meters altitude.
100% Rabigato. The whole bunches are foot-trodden in a limestone basin for 3 hours, followed by pressing in a vertical press. The must flows by gravity into cement vats in an underground cellar with optimal natural temperature and humidity conditions. Spontaneous fermentation occurs without temperature control. The wine is then aged for 2 years in cement vats with malolactic fermentation."
