This blend of 90% Grillo and 10% Catarratto is from the Noto area in Sicily. The vines were organically farmed and macerated for 12 hours on the skins, prior to being fermented at room temperature and aged in stainless steel. Bright and fresh, think sea salt, dried thyme and wild flowers.
