Vinification: Listán Blanco is harvested by hand, whole clusters are gently foot trodden then pressed only by hand and foot; free-run juice is fermented with native yeasts and raised on the lees in 500L barrels for 11 months. (<50 mg/L SO2 TOTAL).

Sunny, high, and exposed, Las Dehesas is a place where grapes achieve brilliant ripeness, balanced by the extreme altitude and poor, rocky soils that Iñaki credits with his Listán Blanco’s ability to retain acidity and express itself fully. The thick cloud cover and humidity (swept by the Alisios trade winds into Mount Teide in the center of the island) which hangs over a lot of the vineyards of northern Tenerife, do not reach Las Dehesas.
Consequently, it is dry and windy there, which naturally precludes mildew and oidium. Iñaki farms organically and by hand because no mechanical work is possible, given the steep and difficult access. He vinifies Las Toscas naturally, with no temperature control or sulfur additions. The grapes are harvested by hand into 20kg crates, then whole bunches are gently foot-trodden one crate at a time, deposited into a basket press, and gently squeezed by hand and foot to release the juice. Las Toscas is not pressed mechanically at any time. The resulting free-run must settles overnight in tank, then is racked to 5th-use barrels, where it ferments with native yeasts then ages on the lees with no bâtonnage for 11 months.
Las Toscas is a stately, mouth-watering expression of Listán Blanco that seems to directly channel the intense sunlight, strong winds, and extreme altitude of Las Dehesas into elements of the wine. Layers of complex, chiseled fruit and bold minerality intertwine with mountain acidity and more volume than we are accustomed to feeling in Listán Blanco from Tenerife, all wrapped up in a tense and long structure. The always exciting Listán notes of citrus, fennel, and crunchy stone fruit are there, combined with the addictive bitterness and textbook streak of dark volcanic grit that runs through the best dry whites of Tenerife. Ever evolving and reflective of vintage, as well as the care that Iñaki takes in the vines and cellar, Las Toscas continues to take us on a journey through this unique, powerful, and fragile place. 1300 bottles were produced in 2023.
