100% Grillo. Arianna planted the vines for this brand-new bottling in 2022 from cuttings from her plot of Grillo in the contrada of Santa Margherita in Chiaramonte Gulfi, at the foot of the Iblei mountains just north of and outside of her home region of Vittoria. This new plot is on a rocky ridge in the contrada of Serra San Bartolo in Vittoria. The name "Serracalcara" references this contrada as well as the calcareous soils; white sand spiked with iron deposits lie over compact limestone on a southwest-facing, windy slope. The farming is biodynamic and the harvest by hand. The grapes are destemmed and macerated for several hours. Fermentation is spontaneous with native yeasts in concrete tanks. The wine is aged for 8-9 months in concrete and bottled without fining or filtering. 2025 is the first vintage of the wine.
