Rocío Áspera and Alejandro Narváez farm organically across 14 hectares in the historic pagos of Balbaína Baja and Grañina within El Puerto de Santa María. Their Amigo Imaginario comes from Plantalina, a 40–50-year-old Palomino vineyard in Pago Balbaína Alta, just 7 km from the Atlantic, where pure albariza chalk soils and cooling poniente breezes create wines of remarkable freshness and energy.
Hand-harvested early and carefully selected, the grapes are chilled for 48 hours before spontaneous fermentation in stainless steel with gentle extraction. The wine then rests for 12 months in ancient Oloroso barrels, filled completely to preserve freshness while allowing subtle complexity to develop. The result is a deeply gastronomic expression of Palomino—an amber-hued wine with the aromatic richness of aged Sherry, notes of tropical fruit, hazelnut, and dried apricot, balanced by the lift, precision, and electricity of a vibrant white wine.
