Note: Ripe raspberry, oak spice, wet concrete, sweet raspberry fruit, juicy with a powdery shale mouthfeel and firm tannin.
Elevage: Grapes were crushed into a bin with 50% stem inclusion and left to ferment with once daily punchdowns. After twenty-four days the grapes were pressed and settled juice was moved to old French and American oak barrels to complete fermentation, including full malolactic, which finished in early-summer 2025. In October the wine was racked off its lees and bottled without fining or filtration.
Miscellaneous: Perfectly ripened Finger Lakes cabernet franc raised in very old French and American oak. The fruit is sweet and full, the tannins emerge after a few hours of air and the shale finish reminds us we're in New York. As good a cabernet franc as we will ever make. Drink over several days.
