Varietals: 60% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc
Notes: Borut was never a fan of roses, especially in his region where both whites and reds achieve beautiful structure and deep expressions given the natural ripeness that the grapes in Brda can achieve from the steep slopes and Mediterranean climate. The idea of disregarding perfectly beautiful grapes with peak-potential, and instead intentionally picking underripe grapes in order to create a fresh rose wine, seemed like a waste of what nature had gifted them.
However, starting with the 2023 vintage, Borut and Simona noticed that some of their recent-planted young red grapevines on the Robida vineyard, had began producing beautiful grapes, even if still young to achieve the character they expect from their red wines.
Borut decided to experiment using these young grapes and producing them in a different way than he has historically with his reds – still picking at peak ripeness and expression, but producing the wines with a shorter maceration and fresher style.
Named after their eldest daughter, Eva, who has already at a young age been very active in supporting the family winery, the resulting wine has been a very exciting one: a light-red/dark-rose glowing garnet and ruby red in color, with beautiful fleshy but bright aromatics. On the palate, the wine is bursting with deep flavors such as ripe strawberry, cranberry and bing cherry, yet the wine still masterfully walks a line of freshness framed with gentle acidity and a refreshing mineral finish. It is a wine that when we first tasted it, we concluded it was a wine we could easily drink every single day and not get tired of it. While we hope you will agree, given they produce such a small quantity of this, no one will be able to achieve this – but we can still dream, right?
